JACKIE BAKES A BANANA BREAD

On 27 August, Jackie writes:

I was going to send the story of why I made banana bread,
but with packing to leave for the weekend retreat and the builders
turning up to do some preliminary work for the extension,
I never got time to do it.

The story: I was trying to get R to join The Men's She'd.
It's a meeting place where men can go and chat and teach or learn how to fix things.
The March one also has a community garden where they grow veg and a community fridge,
which is a room with a couple of fridges and a table.
They told me I could have two bags of food free each week - Mondays & Fridays,
but as it was Thursday they gave me a bag of stuff anyway.

A lot of this is leftover food from the big supermarkets and donated.
It's not a food bank and not means tested;
you just have to live in the area. This pic is the contents of the bag.

I prepped and froze a lot of it, and made chili and garlic bread for Friday dinner at the caravan.


I was given a recipe for banana bread and
I was to post a pic on their Facebook page.
I made the bread, but had to use coconut oil
as I had no butter and no nuts.
It took nearly two hours to bake;
should have been 75 minutes.
It looked nice; the first two slices were OK,
but it was not cooked in the middle.

And it tastes of over-ripe banana
which for me is unpleasant. R liked it.
I'll stick to brownies in future.
I might go back to the community fridge,
but no bread or banana next time.

Cookbook
I received back in 1973;
I think I've used about five recipes out of it
(all but one for baked goods, of course).
But I've kept it all these years anyway.
