I've never really liked pumpkin pie; much too bland & boring.
In the days before the internet, I found a praline topping
Unfortunately, Neal developed a nut allergy when we moved to Florida,
So you don't NEED to have the pecans if you'd rather not;
Mixing station . . .

Dry ingredients . . . | |
Eggs & pumpkin purée . . .
. . . added evaporated milk . . .
Putting-it-all-together station . . .
What the topping mixture should look like . . .
The filling just fits into the crusts . . .
. . . but the topping looks awf'ly sparse . . .
. . . so I make another batch of topping . . .
. . . that's much better!
The most difficult part? Getting the pies into the oven,
Actually, I was smart this time and barricaded Emmie in my office
Out of the oven . . .
. . . and cooling on the wire rack . . .

How'd it taste? I'm happy to say that,
I also think that I prefer the REGULAR crust

The last line on the recipe should read COOL on wire rack.
