NO-BAKE EGGNOG PIE 17 DECEMBER 2024
B. Dylan Hollis made this NO-BAKE EGGNOG PIE, and he made it look soooo easy . . . . . . altho the result might be similar to the EGGNOG PUDDING CAKES I made in December 2022. Mixing station . . . . . . whilst taking this picture, I kept thinking, "This doesn't look right; something's missing . . ."
	Well, duh . . . only the ingredient for which the recipe is named!
Whisking the whipping cream . . . . . . these whisks will turn the cream into butter if I don't watch carefully. I'd forgotten to add a LARGE (5.1 oz) box of JELLO™ vanilla pudding to Neal's shopping list, but I remembered I had three boxes of JELLO™ French vanilla pudding, 3.4 oz. With the scale, I could add enough of the second box to make 5.1 oz . . . . . . which I did, and I have enough left to make another pie, as Neal bought two crusts. I'd like to try this recipe with the Southern Comfort™ Vanilla Spice eggnog. Just FYI: JELLO™ French vanilla pudding mix doesn't come in the 5.1 oz size, but I much prefer the flavor, compared to the regular vanilla pudding. Mixing the eggnog & the pudding mix . . . . . . and adding the whipped cream . . . The ingredients wouldn't incorporate, so I whisked them with the machine for about 30-45 seconds, and that worked better than trying to mix or whisk by hand. Ready to go into the fridge for four hours . . . I think sprinkling with nutmeg at this phase would not be a good idea; better to sprinkle each serving after it has been cut and plated. I wonder if adding nutmeg to the mixture when I added the Southern Comfort™ would have been a good idea. LATER THAT EVENING . . . If you're a lover of eggnog, with or without added liquor, THIS is the pie for you! It is deeeeelicious!
