LEMON ICE CREAM PIE

No, it is not just a matter of melting a quart of ice cream,
pouring it into a pie shell, and then re-freezing it.

This video starts from scratch, but don't believe the "5-minute" claim;
that five minutes does NOT include the prep time.

The recipe is just for LEMON ICE CREAM;
I really don't care for a bowl of ice cream scoops,
and I want to use up the two shortbread pie crusts
I still have on hand so I can order more (they come 12 at a time),
so I thought to make it as a pie . . .

I still had a cut-up,
de-zested lemon
from the LEMON-BLUEBERRY
CREAM CHEESE CAKE ROLL
;
I always have condensed milk
available, and Neal had just
brought home a carton of
heavy whipped cream,
so I was all set . . .

. . . oh, except for a way to squeeze
the lemon juice, so I ordered a . . .

LEMON/LIME

I'm beginning to feel like Tim "The Toolman" Taylor
from the old Home Improvement TV series.
But, as Neal says, a woman is only as good as her tools.

And don't be fooled by the colors; this is NOT plastic.
It is a very heavy, well-made metal lemon/lime squeezer.

I don't think that lemon & chocolate are a good mix,
so I'm using Biscoff cookies instead.

Now for the things that have to be prepared
BEFORE the 5-minute timer begins:

* Making the cookies into crumbs;
I used 10, but wished I'd stopped at eight . . .

(This Cuisinart has been used more since December 2021
than all the 41 years previous.)

* Whipping the cream and storing it in the fridge . . .

* Convincing Emmie to . . .

. . . STAY OUTTA THE KITCHEN!

Somebody say something to me? Hello . . . you talkin' to me?

I put the bag that had stored the cut-up lemon in it on the floor . . .

. . . and Emmie stayed out of the kitchen the entire time I was working in there.

Fold the whipped cream into the condensed milk & lemon mixture . . .

. . . toss the cookie crumbs on top . . .

NAILED

. . . and fold them in . . .

NAILED

. . . pour into shortbread crust . . .

NAILED

. . . and this is what it looks like when it's been in the freezer for 12 hours . . .

Is it a keeper? Meh . . . maybe if I could increase the lemon flavor
and decrease the Biscoff cookie flavor, but I can't say
we're enthusiastic about it.

I think I wanted to make it to face the challenge of converting
the European measurements to American ones,
and still have the end product be edible. I succeeded.
