LEMON PIE

Because . . .

* . . . I threw away the second half of the
Raspberry Cream Cheese Cake Roll;
* . . . The Skrenninger Trio was going to the vet for pedicures;
* . . . I wanted something quick and easy to make;
* . . . I still had one lemon in the fridge that needed to be used;
* . . . it's pouring rain almost the entire day;
* . . . I still had one shortbread pie crust to use before I order more; and
* . . . Neal brought home some cream cheese (he's taken to
buying two-packs, rather than just bringing home one package at a time) . . .
. . . I decided to make Patricia Y's 3-Ingredient Lemon Pie.

. . . with the cake decorating kit giving me the guilts for
concentrating on non-decorated cakes.


Emmie is 'in position' for anything I might drop . . .

See my pretty clipped nails, everybody? We were all good girls at the vet today. Even Gipsy.
Mom sez her next project is learning to groom us. Stay tuned.

As soon as I began to grate the lemon for zest, tho . . .

. . . she moved about 20 feet away, obviously remembering
the plastic bag that had held a cut lemon I'd placed on the floor
so she would STAY OUT OF THE KITCHEN.
Seems to work.

(The vet tech noticed today that Emmie had won the
"Last Dog to Have the Heartgard Sticker on Her Head"
contest this month. I hadn't even noticed. Extra biccie for Emmie!)


And into the fridge for a few hours . . .
