SPRITZ COOKIES OR, HOW I SCREWED UP, MAGNIFICENTLY 15 & 16 DECEMBER 2022
Today, 15 December, was going to be Spritz Cookies Day. Until I remembered I had a mani/pedi scheduled, where Kay literally NAILED IT!
I didn't feel like baking during the afternoon, but in the evening, I made the cookie dough, which is the easy part. Work station #1 . . . . . . but when I added the six yolks (from the MERINGUE COOKIES I made yesterday), I thought, "Gee, that sure looks awfully yellow!" Well, yeah, dummy . . . you were supposed to DOUBLE the recipe for the SIX yolks, but you didn't double the butter! Luckily for me, there was a pound of butter in the second fridge, NOT in the freezer, so I cut two sticks of cold butter into small pieces and added them to the mix. They integrated into the butter/yolk mix, and I proceeded to add all the other ingredients (doubled). However, I figured enough was enough, put the dough into the fridge and plan to make them tomorrow. There is a LOT of dough . . .
