I would substitute "hurricane provisions" like THIS . . . . . . the three most perishable items you can have in the house, according to HER. Checking our provisions: * Nilla® wafers & butter for crust - check; * cream cheese - check (take out of freezer). * whipping cream, pumpkin purée, spices, brown sugar - check; I remembered that I had one frozen deep dish pie crust left, so I will use that instead, hoping that there would be enough filling for a deep dish; the crumb crust wouldn't be deep dish. Mixing station . . .
SOMEhow, even tho she's deaf, Emmie always knows where I am and when I'm about to bake . . . . . . altho getting a full frontal photo of her is difficult . . .

WELL, WHY DIDN'T YOU SAY YOU WANTED THIS POSE??? . . . At least I know enough to stay out of the kitchen now.
First, the whipping cream . . . and you can see why, when I beat egg whites, I wipe the whisks and the bowl with vinegar; I use the same for both . . . I store this in the fridge, as I'm getting ahead of myself; the pie crust has to sit out for 10 minutes, then bake at 400 for 12 minutes. Filling and baked pie crust . . . And yes, there is more than enough filling for a deep dish pie crust . . . This looks better . . . The toothpicks are to keep the filling from schmearing all over the ZipLock® bag I'm putting it in (rather than plastic wrap); it didn't work. It's now 11:30 a.m.; this pie has to be refrigerated six hours, or overnight, so we can try it at 5:30 p.m., or later tonight. THE RECIPE I USED
