The rest of my body alerted me that IT, too, had had some play in this;
especially my shoulders. However, a few Tylenol helped relieve that
and my teeth no longer hurt, so I was ready to try the cake again.
I promptly spilled sugar all over the counter and the floor;
when I reached for the egg whites, the glass had tipped over and they, too,
were all over the counter. This cake just did NOT want to be made!
And I can't say I'm please with the result . . .
. . . I don't think light and fluffy will describe this cake.
This is the second time I've been disappointed by the lack of rising . . .
the BERRY COBBLER didn't rise much, either.
I used a new box of baking powder; I verified the oven temperature;
the baking pans are good quality; the house humidity is low.
Any ideas of what I'm doing wrong?

Sometimes I think my "amateur" method of baking -
throw the ingredients into the mixing bowl, beat the heck out of 'em,
pour the mix into a pan and bake -
had better results than my attempts at "professional" baking.
At least, there were never any complaints . . . or leftovers.
Oh well, at least I remembered to brush on the sugar syrup . . .
. . . BEFORE putting the layers into the fridge, to be frosted tomorrow.
Another issue I had was that there was barely enough reduction for the cake;
luckily, I had some strawberry purée in the freezer to reduce for the frosting . . .
. . . and my silicone spatula set came just as I was beginning to mix the cake;
they really DO feel nicer to work with than do the rubber ones.
Because they're made of one piece,
they won't break off when I work with a stiff batter.
