BAKED LEMON PUDDING CAKE 3 MAY 2023
This recipe came to Neal in his YAHOO! feed, from the Land O'Lakes website HERE. I use their UNSALTED butter in all my recipes, so I thought to try it out. Last August, I bought this juice squeezer thingie to make LEMON ICE CREAM PIE. I soon came to dislike it for two reasons: * My hands are not strong enough to squeeze lemons, so much of the juice was wasted, even if I squeezed by hand; and * Once my hands were wet - and they invariably got lemon juice on them - they were so slippery I couldn't hold on to the handles to squeeze them. Amazon to the rescue, as usual, where I bought this electric juiceer . . . (Actually, it was free 'cause I had so many points.) I think it's a great little machine; no muss, no fuss, no waste, lots of juice. Mixing station . . . Into a bain marie and into the oven . . . Emmie REFUSED to stay out of the kitchen; because she is deaf, there was no point in continually pushing her out and telling her to STAY out, so I used a barricade (we have lots o' those) . . . Should we show Mom how easy it is to push the barricade open? . . . and of course Gipsy had to see what all the ruckus was about . . . We COULD just go to the other kitchen opening, you know. Straight out of the oven . . . When it cooled, I topped it with, of course, STABILIZED WHIPPED CREAM. THE TASTING . . . As promised, the pudding was on the bottom, the cake was on the top. It is delicioso; this recipe is, in fact, very similar to the LEMON PUDDING CAKES I made in ramekins last December.
THE RECIPES I USED
TIPS TO REMEMBER: * Eggs should be room temperature * Wipe EVERYthing that comes into contact with egg whites with vinegar; I cannot stress this enough. * Add CREAM OF TARTAR to egg whites, if needed to bring them to peaks * Whipping cream, bowl & whisks should be COLD * If served warm, top with powdered sugar * If served cold, top with STABILIZED WHIPPED CREAM
