LEMON LEMON

LEMON LOAF
WITH LEMON GLAZE

OR, HOW MUCH CAN GO WRONG
BEFORE I GIVE UP . . .

17 MAY 2023

Neal receives recipes in his YAHOO! feed and
passes along ones he thinks might be good to try.

This week's suggestion was LEMON LOAF WITH LEMON GLAZE,
which seemed simple enough to me . . .

LEMON

ROADBLOCK/SCREWUP #1:
I don't have 8"x4" loaf/bread pans, only 9"x5",
so I had to order two and wait for them to arrive,
several days later . . .

Note that the condensed milk is now BORDEN™,
which has a pop top so I no longer have to take apart the can opener
to clean it each time I open a can of condensed milk.
I'd been complaining about this; someone must've heard me.

ROADBLOCK/SCREWUP #2:
Silly me . . . thinking that because there is a pop top,
there won't be a sharp edge. I found out I was wrong
when I slid my finger around the edge and sliced it
(the finger, not the edge).

Batter ready to go into loaf pan . . .

ROADBLOCK/SCREWUP #3:
The parchment paper didn't go high enough,
so I had to move the batter to the other pan . . .

I'm so glad I had two pans,
or it would've been an even bigger mess than it was.

Fresh out of the oven . . .

. . . and the end result . . .

ROADBLOCK/SCREWUP #4:
Whilst reformatting the recipe cards
for this site as the cake was baking,
I realized that I was supposed to add
one
CUP of condensed milk, which is eight ounces;
I had added one
CAN, which is 14 ounces.

I thought for sure this would be another FAILED IT!
but it baked up fine, is very flavorful,
and has pound cake texture, albeit a bit more dense.
