STRAWBERRY MOUSSE #1
(WITH EGG YOLK)

When Neal brought home the raspberries & blueberries for the
LEMON LOAVES WITH LEMON GLAZE
I made for Patricia, Henry & Jackie,
he also brought some lovely strawberries,
so I looked for something different to make with them.
I decided on this STRAWBERRY MOUSSE.

First, however, I followed this tip:
When you get your berries home, prepare a mixture of one part vinegar
(white or apple cider work best) and ten parts cold water.
[I used 1 tablespoon vinegar and 1/4 cup + 2 tablespoons water.]
Dump the berries into the mixture and gently swirl around.
Drain, rinse if you want (though the mixture is so diluted you
can't taste the vinegar), and put in the fridge.
The vinegar kills any mold spores and other bacteria that
might be on the surface of the fruit. [And it worked.]

Because this recipe came from a German baker,
I used the metric measurements.
How DO you measure out 4/5 cup of sugar?
I found that the measurements did not quite correspond,
so don't mix; use either metric or the other.


Strawberries in a shallow bowl . . .

. . . which was NOT a good idea;
the immersion blender splattered strawberry purée all over me . . .

. . . but it WAS fun to use.


Gipsy was not all interested in what I was baking . . .

. . . she was busy waiting for Neal to come home.

The recipe on YouTube gave no time or temperature for the thickening process . . .

. . . so I did four minutes on medium and then three minutes on simmer.
BE SURE to continually whisk AND scrape the sides so the mixture doesn't burn.


I put the mixture in a medium-sized bowl,
even though it would have fit in a smaller one;
this way, it would cool faster.

Again, the original recipe gave no time for this,
so I left it in the fridge for an hour and that was just enough.

I used the time to wash the items I'd used
(I haven't a wash-up crew like the YT and TV chefs & bakers do),
and to change the water of the nine ORCHIDS I am rescucitating.
