EASY PEASY NO-BAKE
KEY LIME or LEMON PIE

Hard to believe, but I've been asked what, if anything,
I've baked since the macaron debacle.

Nothing, actually; it's taken us this long to finish those cookies.

It's hot & humid today, with storms coming on,
so I grabbed the recipe for 3-Ingredient Key Lime/Lemon Pie
that Patricia shaired with me.

The mixing station, overseen, as usual, by the flamingos perched on my recipe box . . .

I was, as per usual, impatient and didn't let the cream cheese get to room temperature . . .

. . . and I cleaned off the beaters AFTER putting the mix into the pie crust,
leaving a few cream cheese lumps. Oh well . . .

After 1.5 hours in the fridge (again, impatience did me in),
I served us each a slice. Well, more like a mound . . .

. . . but pile on enough whipped cream and no one will notice.
(Neal always says he likes a little bit o' pie with his whipped cream,
and I'm glad to oblige.)

He brought home some lovely ORGANIC strawberries, so I used one for decoration.
And some powdered sugar. Tasted delicious.

Now I have to think of something to make with two quarts of lovely strawberries.
I remember seeing a video of a Strawberry Cheesecake Roll that I might try.

I made it again, this time using the WHISKS instead of the beaters.

NOT ONLY is it lump-free, it is melt-in-your-mouth light.
