ONION ONION

B. DYLAN HOLLIS'
ONION SOUP
BREAD
21 JUNE 2023

It's a rainy day in Florida, so for something completely different,
I am trying this recipe for
ONION SOUP BREAD, 1968;
I can remember when this was popular [way] back then.

Of course, as soon as I began preparing to put this together,
the rain stopped and the sun came out.
It amazes me sometimes, how much influence I have over weather.

ONION

This recipe is another from B. Dylan Hollis,
whom I call "The Manic Baker"
as he sure is, but he's fun to watch.

He's made some truly ATROCIOUS recipes,
many of them from the two World Wars
and USA's Great Depression.

His recipe for ALL-SPRINKLE COOKIES, 1960
and MY VARIATIONS was definitely a keeper.

I'm so looking forward to reading his cookbook in July.

Just for fun, I converted the measurements to metric;
I thought they'd be easier to work with.

Unfortunately, not every conversion table on the internet
agrees with the conversion equivalents, so I'm kinda winging it.

Mixing station . . .

ONION

Publix only had French Onion Soup mix,
which could make the taste quite different.

Flour & baking soda . . .

Buttermilk . . .

ONION

As I have two cups of buttermilk left over,
I intend to make this again soon,
but using US measurements,
plain Onion Soup mix,
and SHARP cheddar cheese.

Adding buttermilk to the dry ingredients . . .

ONION

NTS: Use a spoon at this point, NOT a whisk.

Measuring cheese . . .

ONION

NTS: Maybe check the recipe once in a while!
This was s'posed to be ONE WHOLE CUP, not half a cup.

Into the loaf pan . . .

ONIION

I noticed that my dough was "wetter" than Dylan's,
but I'd no idea why that was.

Then into the oven . . .

(Actually, it was already IN
the oven when I realized
I hadn't taken a pic,
so I pulled it out after only
a minute or two.)

ONION

Doesn't this look lovely . . .

ONION

. . . and THIS is what it looks like on the inside . . .

ONION

Tastes good, too, albeit not as cheesy as it would've been
had I put in the correct amount of cheese.
I also think SHARP cheddar would increase the flavor;
in this case, the FRENCH Onion Soup flavor dominates.
