STRAWBERRY CREAMCHEESE CAKE ROLL

The 3-Ingredient Key Lime Pie lasted all of two days,
and I have two quarts of strawberries staring at me
every time I open the fridge, so I looked for something
to make with strawberries that weren't puréed.

This looked like fun & different . . .

. . . and I'll take the cream cheese out of the fridge early enough this time.

Then I saw this . . .

. . . so I thought to combine the two recipes.

(This will be good practice for the Bûche de Noël . . .

The [hand] mixing station . . .

. . . the decorative strawberries . . .

. . . the towel with powdered sugar sifted onto it . . .

. . . . into which I immediately stuck my hand as I reached for my glass of water.

Into the fridge for 30 minutes . . .

Unfortunately, the entire thing 1) took double the
time to bake; and 2) broke in half as I tried to flip it.

But I persisted; made the cream cheese filling, added strawberries . . .

. . . discovered that
Gipsy had snuck
into the kitchen and
was hiding under the table,
hoping another strawberry
would fall off the table . . .

. . . and realized I didn't have a rectangular plate for this . . .

NAILED

. . . which didn't matter 'cause it all broke apart anyway.

HOWEVER, it tastes delicious, and I keep pulling off pieces of it to eat.
Luckily for me, looks don't affect flavor!

Is this a Keeper? Definitely, with some changes:
* Do some arm exercises so that I can whisk by hand for longer
* Try using my food processor (that 30-year-old Cusinart)
with the slicing blade to slice the strawberries
* Use a smaller jelly roll pan. None of the recipes I checked
mentioned a pan size, so I used the largest of the three sizes I have;
the cake was so thin it broke apart because of those
fancy-schmancy decorations I took from the other recipe
* Eliminate the fancy-schmancy decorations
* Use parchment paper instead of a kitchen towel
(the towel was such a mess, I just threw it away)
* Sift powdered sugar over the cake before rolling it up
* Find a rectagular dish, just in case it DOES become a roll,
rather than a mound
* Double the amount of filling to use half as frosting
* Remember to keep back some strawberries for decorating the top
* Rename this recipe as Strawberry Creamcheese Cake MOUND
