Key lime juice has a fast expiration date,
so this morning I made . . .

. . . KEY LIME MOUSSE #4 . . .
I simply substituted GOLDEN OREO™ cookies
for the NILLA™ cookies in KEY LIME MOUSSE #3 HERE.


Mixing station . . .

Something I didn't think of
is that OREO™ cookies are,
because of the cream between
the cookie layers, NOT in need
of as much butter as are the
NILLA™ cookies.

Naturally, I realized this AFTER
I had melted FOUR tablespoons
of butter and poured them into the
food processor, so I just added
the cookies that were left in
the package.

I think the total
was 14 or 15. At this point,
I didn't think it mattered.

You can see here how clumpy the crumbs are,
but they taste sooooo good, with all that butter . . .

The whipping cream . . .

. . . the condensed milk . . .

KEY

. . . and the Key lime juice . . .

KEY


I was distracted and accidentally added the condensed milk,
the extract, the food coloring & the Key lime juice to
the whipping cream all at once,
then used the machine to whisk them together,
instead of gently mixing with a spatula . . .

KEY

. . . this actually made the mixture more stiff;
I could have used the pastry bag this time.
