ONION SOUP
BREAD REDUX

At 8 a.m., it's already too hot & humid to sit outside,
so I do the most illogical activity I can think of . . .
make the ONION SOUP BREAD, 1968 again,
this time with the ingredients as stated in Dylan's recipe.
(Yeah, we're on a first-name basis by now.)

Mixing [by hand] station . . .

ONION

I ordereed [regular] Onion Soup mix from amazon,
which could make the taste quite different,
as will the SHARP cheddar cheese.
Oh, and the full one cup this time, too.


Flour, baking soda & soup mix . . .

ONION

I don't know if one ounce is standard,
but that's how much soup mix there was.
Didn't seem to be as much as the French Onion Soup mix
I used the first time. I guess we'll find out.


Adding buttermilk to the dry ingredients . . .

Surprisingly, there wasn't enough buttermilk,
so I pourd in some 2% milk. Too much,
so THEN I added two tablespoons flour to compensate.


Adding sharp cheddar cheese . . .

Here's an example of discrepencies in conversions:
The internet source I used equaled one cup of cheddar cheese at 235 grams;
the package equaled one cup at 246 grams.
But, as with glitter, you can never have too much cheddar cheese,
so I dumped in the entire package.


Mixed together . . .

I used parchment paper & PAM™ this time;
it was fitted better than it looks here . . .

Into the loaf pan . . .

Once the cheese is on top, it's much easier
(and cleaner) to pat the dough into the corners
and wherever else it needs patting flat.

AND THIS IS WHAT IT LOOKS LIKE ON THE INSIDE!

. . . so I'm using them both . . .

. . . because it tastes as good as it looks; much cheesier,
as is to be expected. I think I'll stick with the original ingredients.

What I also like about this bread is that everything is mixed in one bowl,
so clean up is easy peasy.


One more thing: This is what is known as a quick bread,
as opposed to a yeast bread. The leavening ingredient is baking soda
(and/or sometimes baking powder) and there is no kneading needed.

Banana bread, zucchini bread, etc., are all quick breads.
