[NO-BAKE]
RED, WHITE & BLUE
BERRY-LEMON PIE
WITH AN GOLDEN OREO™ CRUST
2 JULY 2023

Jeanne P sent me this recipe for LEMON-BLUEBERRY PIE;
blueberries were BOGO this week, which I took as an omen . . .

[NO-BAKE]

. . . as were strawberries, so those will be used next;
I gave 'em all a vinegar bath.

We've been under a HEAT DOME since 27 June,
altho we just learned about it on 1 July.
Today, the "feels like" temperature is 109F,
and a neighbor's pool pump
has been screaming since last night (maybe a bearing?),
so it's a good day to stay indoors
and make something "patriotic."

The crust should be made first, so this is the pulsing station . . .

[NO-BAKE]

In May, when I realized how difficult
it was to cut thru ice cream pies,
mainly 'cause I was using non-stick pie pans
and couldn't press down hard on the knife,
I purchased these glass pie pans . . .

FOUR

. . . 7", 8", 9" & 10"; I decided to use
the 10" so I'd have room for the
STABILIZED WHIPPED CREAM.

Also, I sprayed the pan with PAM™,
put in a parchment paper round,
and sprayed THAT, too.

Mixing station #1 . . .

LEMON-BLUEBERRY

. . . today I was able to use all my handy-dandy gadgets:
the food processor, the scale, the juicer and the grater.

Lemon juice . . .

(I have plans for the lemon peels, too.)

. . . exact measurement . . .

. . . adding condensed milk . . .

. . . another handy-dandy gadget,
the immersion blender.

When I first read the recipe,
I said, "I don't have
a blender; a food processor
isn't the same."

Taste Tester #1 reminded me
that I have a gadget that
has the word blender
right in it. Right he is!
(And it's a lot easier to clean.)

This looks like a smoothie . . .

Into the crust, and then into the freezer for an hour . . .

LEMON-BLUEBERRY

I opted for the freezer to get the ice cream texture,
rather than the refrigerator,
which would give it a custard texture.
