ROASTED FRUIT
ICE CREAM

I sometimes go down the rabbit hole of YouTube SHORTS,
just to see what's available; yesterday, I came across this
[NO-CHURN] ROASTED FRUIT ICE CREAM.

But you don't even LIKE ice cream, I hear you think.
True, but for many reasons - berries that need to be used,
it could go on the SUMMER BERRY BUCKLE I'd made on Friday
and with which I was already bored, it's hot outside again, etc. -
but to be honest, it met my #1 criterion for experimentation:
It looked interesting.

I mean, who ever heard of roasting fruits?
Obviously, a lot of people,
if YouTube videos are anything to go by!


Mixing station # 1 . . .

Prepping the tray . . .

Prepping the berries . . .

[NO

. . . I should either use a smaller tray or add more fruit,
if I ever do this again.


I started the beating of the whipped cream,
gave the bowl a twirl, as I always do,
turned to the sink for a second, turn back and I see . . .

WHAT ARE YOU DOING IN HERE AND
WHAT ARE YOU LICKING OFF THE FLOOR?!?!


THEN I look at the counter and see . . .

. . . then look down again and see . . .

[NO

. . . centrifugal force had gotten hold of the bowl and
was turning it so fast I thought it was going to take flight!

So off to the laundry room for a change of clothes
(yes, it was also all over my shorts,
and yes, we keep changes of clothes in the laundry room),
and to start a load of laundry.
I also wiped down EVERYthing on the counter and
the counter itself so as not to attract "critters";
always a concern in this tropical land.


By now the roasted fruits are ready to remove from the oven . . .

. . . although I must say I'm underwhelmed by the amount of juice;
the whole purpose of roasting them was so the juices would 'run out'.
These barely have juice oozing out.


Mixing station #2 . . .

[NO

. . . I had extra whipping cream, so I added some
to make up for what was flung out of the mixer.


Emmie, of course, is standing by for another chance to yell,
CLEAN UP IN AISLE FIVE!

That ain't gonna happen again, kid!


Mixing station #3 . . .

[NO

I lined the loaf pan with parchment paper,
just so we wouldn't accidentally scratch the no-stick surface.


Berries & melted chocolate . . .

[NO


. . . into the loaf pan . . .

[NO

. . . and into the freezer for six to eight hours.


At 4 p.m., after six hours . . .

[NO


. . . and served with SUMMER FRUIT BUCKLE . . .

Perhaps because I added the chocolate,
it doesn't really go well with the Buckle;
it sure tastes good on its own, tho!
