LEMON BERRY
MERINGUE PIE
STEP 1: BLUEBERRY JAM

These cornbreads have been easy peasy; it's time for
something a little bit more complicated, so I'm planning
to make Preppy Kitchen's LEMON BERRY MERINGUE PIE.

This will be a several-day project,
which is fine with me.

I purchased John Kanell's book,
PREPPY KITCHEN:
RECIPES FOR SEASONAL DISHES
AND SIMPLE PLEASURES

I've purchased more cookbooks
in the past two months (2)
than in my previous 74 years (0).


The first ingredient to make is the
MICROWAVE BLUEBERRY JAM;
I found the least complicated recipe;
Neal brought home the
blueberries & lemons.

Bluebereries are on BOGO,
which is always a bonus,
in case I make a
FAILED

Adding all ingredients into a bowl . . .

The recipe states to add ALL ingredients, which I did;
later in the recipe it states to add vanilla AT THE END.
I've change the recipe to reflect that.


Mixing the ingredients . . .

After first three minutes of nuking . . .

MICROWAVE


. . . I continued nuking in one-minute increments . .

MICROWAVE

. . . altho I can't say it ever got thick[er].
After more than the five minutes recommended,
I stopped nuking it, poured it into a container,
and refrigerated it. For my purpose,
it doesn't really have to set.

I can do the crust tomorrow.




6 AUGUST UPDATE

It definitely set during the night; had some on breakfast toast . . .

MICROWAVE

I used to have canning jars, but I disposed of those years ago;
this airtight plastic container works just as well.
