FLOURLESS MOCHA CHEWY COOKIES & CINNAMON DROP COOKIES 13 AUGUST 2022
Perhaps it was time to go thru my recipe box and try some recipes that've been in there for YEARS, but never been tried. Flourless Chewy Chocolate Cookies look good . . . . . . altho I will, as usual, add something, like espresso powder to make them MOCHA Flourless Chewy Chocolate Cookies. Not having thought to take the butter out of the freezer the night before, I took out two sticks of butter and waited 'til after lunch to start baking . . . . . . and there's the butter being beaten, and the other ingredients. Then I looked at the recipe again - only five ingredients, AND NOT ONE OF THEM IS BUTTER! So . . . what other recipe do I have that calls for a cup of butter? . . . Cinnamon [Pecan] Drop Cookies (without the pecans) So I switch out a few of the ingredients and carry on . . . . . . 'til I discover the butter is to be mixed with a pastry cutter, NOT with a mixer. Undeterred, I toss the dry ingredients in with the already-creamed butter . . . . . . and use the pastry cutter until the dough becomes "rollable" . . . . . . using my old but faithful non-stick cookie sheets. They turn out lovely, and taste wonderful; very light and they melt in your mouth . . .
