IN A CAST-IRON SKILLET

I know it's technically Pumpkin Pie Spice Season,
but this recipe for ANY-FRUIT COBBLER
came up in my POCKET feed.
I've wanted to try baking in a cast-iron skillet,
AND I have two 10-ounce bags of fruit in the freezer
altho I cannot remember why,
so this is the recipe of the week . . .

Well, the two bags weren't enough,
so Neal brought home a 12-ounce bag
of frozen blueberries, for a total of 32 ounces
or four cups, as called for in the recipe.


Do I even HAVE a cast-iron skillet?
Of course not, so over to amazon.com to order one . . .

I can now see why there is an extra handle on these;
even empty, it's HEAVY!


Mixing station . . .

Some mixing whilst
the butter is melting in the skillet,
the butter goes into the batter,
the batter goes into the skillet,
the fruit goes into the batter . . .

. . . and the skillet goes back into the oven.
This went together way too fast and
the skillet was too hot to break off to take pics.
Sorry.


I KNEW when I poured the fruit into the skillet
that it was going to overflow . . .

. . . and it did. The skillet I bought is 10.25";
I think 4 cups of fruit would be better for a 12" skillet.
If I make this again, I will use two bags of fruit, not three.


It does look good, tho . . .

It fell as it cooled . . .

. . . no matter; it tasted very good, with a bit of whipped cream!


THE RECIPE I USED

Four cups of fruit would
be good for a 12" skillet;
use two or three cups
for a smaller skillet.
