APPLE-CINNAMON CAKE
WITH ICING

"Cold" weather came to Florida,
so I wanted to make something fallish,
but without pumpkin pie spice.
When I came across this recipe for
APPLE-CINNAMON CAKE WITH ICING,
I knew I'd found my next baking project . . .

Mixing station #1 . . .

The apple peeling machine is very convenient . . .

I suddenly realized that maybe dicing apples
wasn't such a good idea,
as I am still without my glasses and
I have no depth perception.

Oh well, too late now!


Sugar for apple coating;
this was supposed to be 20 grams,
but this (and a few others were incorrectly read [see above],
so I added 40 grams by misteak) . . .

SPOILER ALERT: This did not affect the taste at all;
in fact, with the amount of apple pieces I had,
I think this amount of sugar was better.


I only wish I'd doubled the amount of cinnamon . . .

Brown sugar for dolloping . . .

. . . altho it seemed to me to be too liquid to dollop . . .

. . . however, I checked the original recipe;
120 grams of butter is the correct amount.
That's an entire stick; I think I'd reduce it.


Sifted flour for the cake batter . . .

. . . as well as sugar & baking powder . .

. . . and eggs & milk . . .

APPLE-CINNAMON

The canola oil was mixed in after these.


Mixing station #2 . . .

Fortunately, I again looked over my recipe
(printed in 24-point text so I could read it)
and realized I was to use parchment paper,
rather than PAM™. No harm done.


Apples mixed into batter . . .

. . . and spooned (rather than poured) into baking pan . . .

This looks like potatoes drowning in gravy,
but it IS the brown sugar/cinnamon mix.
It just wasn't dollopable.

Into the oven it went, for 43 minutes.


Out of the oven . . .

Sifted powdered sugar for icing . . .

APPLE-CINNAMON


Unlike the brown sugar/cinnamon mix,
the icing mixture was too thick . . .

APPLE-CINNAMON

I'd used whipping cream instead of milk,
so I added a few tablespoons of milk.


The end result . . .

I had two pieces for dinner.
It tastes as good as promised,
especially with whipped cream.
I would, however, add some salt to the batter.


THE RECIPE I USED

Granny Smith and/or MacIntosh.
