So many pumpkin pie recipes, so little time!
Here's an easy one . . . PUMPKIN BARS . . .

Mixing station . . .

Delete the quart of 2% milk from this pic;
replace with a can of evaporated milk.


The cake mix base . . .

. . .which seems VERY thin, but will rise with baking.


The pumpkin filling mixture . . .

Cutting in the butter, reserved cake mix
& pumpkin pie spice for the topping . . .

Putting it all together, ready for the oven . . .

. . . and after an hour of baking . . .

It's important to let pumpkin anything cool to let the mixture set,
or you'll have a real mess on your hands.
You can, however, warm it up when serving without any issues.

Which we did a few hours later,
and it was delish.
