This ITALIAN ORANGE CAKE caught my attention
while I was scrolling thru YouTube . . .

. . . so I thought I'd give it a try as it only required four ingredients.

There were no large single Navel oranges available,
so Neal brought home a bag of smallish oranges;
turns out they were Mandarin oranges,
so I didn't know if they would work.

Zested and cut-up oranges . . .

The cake had a texture I'd not experienced before,
but it was pleasant enough. The orange bits were bitter.
I may try it again with a Navel orange,
but I think we'll just eat the rest of the Mandarin oranges as they are.
