SALTED CARAMEL
CRACKER BITES

I've not been baking much, due to dietary restrictions,
but this SALTED CARAMEL CRACKER BITES caught my attention
while I was scrolling thru YouTube . . .

. . . so I thought I'd give it a try as it only required four ingredients
AND I have no restrictions on sugar.

I am, however, limiting my salt intake,
so I made the additional salt optional;
the oyster crackers,
which I happened to have on hand,
are already lightly salted.


Mixing station . . .

. . . aaaaaand it was while looking at this pic I realized
I'd added baking POWDER instead of baking SODA.
Which would 'splain why,
when I added it to the hot butter/sugar mixture,
I didn't get the volcanic reaction I expected.

We'll have to wait for the cooling down and tasting
to see if this is a NAILED IT! or FAILED IT!

WHY BAKING SODA? I hear you ask.
When I used to make MIXED NUT BRITTLE,
I thought it was too hard to eat safely
(speaking as one who broke a bridge on a free piece of candy
and then spent a fortune on having her entire mouth redone).
Adding baking SODA makes the brittle (butter/brown sugar)
much lighter in texture and more pleasant AND safer to eat.


Just as Beyoncé sings: SINGLE LAYERS . . .

. . . of oyster crackers, that is.


Melted butter, with vanilla, brown sugar & cinnamon added . . .

SALTED


. . . brought to a boil, with continuous whisking . . .

SALTED

. . . and boiled until thickening begins.


Mixture is poured over the crackers . . .

. . . thoroughly mixed in . . .

SALTED

. . . and into the oven.


Coming out of the oven . . .

SALTED


. . . cooling down . . .

SALTED


. . . broken up . . .

SALTED


. . . and stored in airtight containers . . .

SALTED



OMDog! These are so good, even with one wrong ingredient;
they were light and fluffy and soooo flavorful.
I have to be careful not to overeat these!

Many years ago, a dear friend
gave me her recipe with Corn Pops, which is
quite similar to the one for oyster crackers,
albeit with more ingredients. I don't even know
if Corn Pops exist anymore, but here is the recipe,
in case you're interested . . .
